I was born in Lynn, Massachusetts, on January 30th, when my parents were on their
way home to Boston from a party. My mom was 'very big' with the Charleston and lost
her head I guess, and also 'very big' with me. We lived in Boston, where my father
managed 'us' and the Hotel Somerset, and then at 'The Country Club' in Chestnut Hill,
Massacusetts, dining mostly on 'Pheasant Under Glass.' Summers were spent in a quiet
village in southern New Hampshire.
My father owns The Colonial Inn in Concord,
Massachusetts, which was built in 1775. All the food prepared there is Yankee cooking.
I remember Brown Bread and Baked Beans in a Big Brown Pot every Sunday- that's what
we were brought up on. I live in New York City and although the 'madness captivates
me here' everyone almost always asks, 'But where are you from?' I proudly
say, 'I'm from Boston.' 'Oh!' they say, surprised. 'Yup,' I say 'Once
a Yankee, always a Yankee.'"
WOOL'S-GRIMES ECSTATIC BROWNIES
"I have been baking these brownies for 15 years, and there has never
been guest wh didn't say. 'These are the most delicious I've ever tasted.' They were
created in Long Island on a warm sunny day when Wool and Grimes decided to go 'straight
to heaven' in the kitchen."
1 teaspoon baking power
2 cups sugar
1 cup flour
4 eggs
5 squares Baker's unsweetened chocolate
1/2 pound
butter (oh my!)
Combine dry ingredients in a bowl and set aside. In separate
bowl lightly whip the eggs. Melt chocolate and butter in double-boiler until smooth.
Pour into first bowl with dry ingredients. Add eggs and stir. Pour into baking pan-
standard size, 10 inches. Bake in oven preheated to 350 degrees. Watch carefully
after 30 minutes; it usually takes 40 to 45 minutes. The point is that they must
be moist.
LEMON BARS
1 cup plus 2 tablespoons softened butter
1/2
cup sifted confectioners sugar
1/4 cup sifted bleached all-purpose flour
3
eggs
1 cup sugar
1/2 cup lemon juice
Spread a 9" x 9" baking
pan with 2 tablespoons of the butter. Set aside.
Beat the remaining butter in
a bowl with a whisk, or electric beater, until creamy. Gradually add the confectioners
sugar- mixture should be fluffy when concluded. Add flour and stir with spoon till
everything is smooth. Spread evenly in the bottom of the baking pan.
Bear eggs
lightly in a bowl, gradually beat in the sugar and lemon juice. Spread evenly over
the pstry. Bake at 350 degrees in a preheated overn for 25 minutes.
Remove, cool,
and cut into bars.
